Crockpot Beef and Noodles

2 lbs beef chuck roast, trimmed and cut into 1-inch cubes

1 cup beef broth

1 cup water

1 medium onion, diced

2 cloves garlic, minced

2 cups carrots, sliced

2 cups mushrooms, sliced (button or cremini work well)

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

16 oz egg noodles

1 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Prepare the Beef: Season the beef cubes generously with salt and pepper. In a large skillet over medium-high heat, sear the beef cubes until browned on all sides. This step adds depth of flavor but can be skipped if you’re short on time.

    Add Ingredients to Crockpot: In your crockpot, layer in the diced onion, minced garlic, carrots, and mushrooms. Place the seared beef on top.

      Mix the Broth: In a mixing bowl, combine the beef broth, water, soy sauce, Worcestershire sauce, thyme, rosemary, and the bay leaf. Pour this mixture over the beef and vegetables in the crockpot.

        Cook: Cover the crockpot and cook on low for 8 hours or on high for about 4-5 hours until the beef is tender and easily shreds with a fork.

          Add the Noodles: About 30-45 minutes before serving, stir in the egg noodles. If using frozen peas, add them at this time as well. Add a bit more water or broth if the mixture seems too thick.

            Finishing Touches: Remove the bay leaf before serving. Taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh parsley.
