1 pound boneless, skinless chicken breasts

4 cups fresh or frozen corn kernels

1 medium onion, diced

2 medium potatoes, peeled and diced

2 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream (or half-and-half for a lighter version)

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

Fresh chives or parsley for garnish

Sauté the Aromatics: In a skillet over medium heat, add the olive oil. Once hot, sauté the diced onion and minced garlic until the onion is translucent, around 3-4 minutes. This step enhances the flavors of your chowder.

    Prepare the Crockpot: Transfer the sautéed onion and garlic into the crockpot. Add in the diced potatoes and corn kernels.

      Add Chicken and Broth: Place the chicken breasts on top of the veggies. Pour in the chicken broth, ensuring everything is submerged. Season with dried thyme, smoked paprika, salt, and pepper.

        Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.

          Shred Chicken: About 30 minutes before serving, remove the chicken from the crockpot. Shred it using two forks and return it back to the pot.

            Add Cream: Stir in the heavy cream and let it heat through for the last 30 minutes of cooking. This will create a rich and creamy texture.
