Crockpot Sausage and Veggie Hash

1 pound Italian sausage (mild or spicy, sliced)

3 medium potatoes, diced (yellow or red)

1 bell pepper (any color), chopped

1 medium onion, diced

2 cloves garlic, minced

1 cup baby spinach or kale, chopped

1 cup cherry tomatoes, halved

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Ingredients: Start by washing and chopping all vegetables. Dice the potatoes, chop the bell pepper, and onion, and halve the cherry tomatoes. Set aside.

    Sauté the Sausage: In a skillet over medium heat, add the olive oil. Once hot, add the sliced Italian sausage. Cook until browned on the outside, about 5-7 minutes. This step adds depth of flavor to the dish.

      Combine in the Crockpot: Transfer the browned sausage to the crockpot. Add the diced potatoes, chopped bell pepper, diced onion, minced garlic, cherry tomatoes, and chopped spinach or kale.

        Season the Dish: Sprinkle in the smoked paprika, dried oregano, red pepper flakes (if using), salt, and pepper. Mix everything gently to combine all ingredients.

          Cook: Cover the crockpot and set it to low heat. Cook for 6-7 hours, or on high heat for 3-4 hours. Stir halfway through if possible, to ensure even cooking.

            Finish and Serve: Once the cooking time is finished and the potatoes are tender, taste and adjust seasoning if necessary. Serve hot, garnished with freshly chopped parsley for a burst of color and freshness.
