Croissant Breakfast Sandwiches

4 large butter croissants

8 large eggs

1 cup shredded cheddar cheese (or your cheese of choice)

½ cup cooked bacon, chopped (or turkey bacon)

½ cup baby spinach (optional)

4 tablespoons butter

Salt and pepper, to taste

Optional: hot sauce or garlic aioli for topping

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare the Croissants: Carefully slice each croissant in half horizontally. Place them on a baking sheet, open-faced.

      Cook the Eggs: In a large bowl, whisk together the eggs, adding salt and pepper to taste. In a non-stick skillet, melt 2 tablespoons of butter over medium heat. Pour in the eggs and scramble gently until they are just set but still soft and creamy. Remove from heat.

        Assemble the Sandwiches: On the bottom half of each croissant, layer the scrambled eggs evenly. Add the chopped bacon, then sprinkle with shredded cheddar cheese and baby spinach if using.

          Top with the Croissant Lid: Place the top half of the croissant on each sandwich.

            Bake: Brush the tops of the sandwiches with the remaining 2 tablespoons of melted butter. Place the baking sheet in the oven and bake for about 10-12 minutes, or until the croissants are golden and the cheese is melted.

              Serve: Remove from the oven and let cool for a minute. Serve warm with hot sauce or garlic aioli on the side if desired.
