Crunchy Air-Fried Breakfast Wrap

4 large flour tortillas

1 cup cooked and crumbled breakfast sausage or plant-based sausage

4 large eggs

1/2 cup shredded sharp cheddar cheese

1/2 cup diced bell peppers (any color)

1/4 cup diced red onion

1 avocado, sliced

1/4 cup fresh cilantro, chopped

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

Cooking spray or olive oil

Instructions
 

Prepare the Filling: In a large skillet, over medium heat, sauté the diced red onion and bell peppers until soft (about 5 minutes). Add the crumbled sausage (or plant-based alternative) and cook until heated through. Season with garlic powder, paprika, salt, and pepper. Remove from heat and let cool slightly.

    Cook the Eggs: In a medium bowl, beat the eggs with a pinch of salt and pepper. Pour the mixture into the same skillet and scramble over low to medium heat until fully cooked. Set aside.

      Assemble the Wraps: On each tortilla, layer:

        - A generous scoop of the sausage mixture

          - A portion of scrambled eggs

            - A sprinkle of shredded cheddar cheese

              - A few slices of avocado

                - A handful of chopped cilantro

                  Wrap the tortilla tightly by folding in the sides and rolling it up from the bottom.

                    Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C).

                      Air Fry the Wraps: Lightly spray or brush the outside of each wrap with cooking spray or olive oil. Place the wraps in the air fryer basket, seam side down, making sure they are not touching. You may need to do this in batches depending on the size of your air fryer. Cook for 8-10 minutes or until golden brown and crispy, flipping halfway through.

                        Serve and Enjoy: Once done, remove the wraps from the air fryer and let them cool for a minute. Slice in half, serve with hot sauce or salsa, and enjoy your crispy sunrise crunch wrap!
