1 large eggplant

1 cup buttermilk (or dairy-free alternative)

1 cup all-purpose flour (or gluten-free flour)

1 cup panko breadcrumbs

½ teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Olive oil spray (or cooking oil spray)

Optional: Fresh parsley or basil for garnish

Optional: Marinara sauce for dipping

Instructions
 

Prepare the Eggplant:

    Cut the eggplant into ½-inch thick slices. To reduce bitterness, sprinkle the slices with salt and let them sit for about 30 minutes. Rinse and pat dry with paper towels.

      Create the Breading Station:

        In one bowl, pour the buttermilk. In a second bowl, mix the flour with garlic powder, onion powder, smoked paprika, salt, and black pepper. In a third bowl, place the panko breadcrumbs.

          Coat the Eggplant Slices:

            Dip each eggplant slice first into the flour mixture, ensuring it is fully coated. Then, immerse it into the buttermilk, letting any excess drip off. Finally, press the slice into the panko breadcrumbs, coating it generously. Repeat this for all slices.

              Prepare the Air Fryer:

                Preheat the air fryer to 375°F (190°C) for about 5 minutes.

                  Arrange for Cooking:

                    Lightly spray the air fryer basket with olive oil spray. Place the coated eggplant slices in a single layer in the basket, ensuring they do not overlap. You may need to work in batches depending on the size of your air fryer.

                      Air-Fry the Eggplant:

                        Spray the top of the eggplant slices lightly with olive oil to get that golden crunch. Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.

                          Serve:

                            Once done, remove the eggplant slices and let them cool slightly. Garnish with fresh parsley or basil if desired. Serve warm with marinara sauce for dipping.
