Crunchy Air-Fried Veggie Sticks

1 cup zucchini, cut into thick sticks

1 cup carrots, cut into thick sticks

1 cup bell peppers (any color), cut into thick sticks

1 cup green beans, trimmed

1 cup breadcrumbs (panko for extra crunch)

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking spray or olive oil spray

Instructions
 

Prep the Veggies: Start by washing and cutting all the vegetables into thick sticks, ensuring they are uniform in size for even cooking.

    Set Up Breading Station: In three separate bowls, prepare your breading station. Place flour in the first bowl; in the second bowl, beat the eggs; and in the third bowl, mix the panko breadcrumbs with garlic powder, onion powder, paprika, salt, and pepper.

      Coat the Veggies: Take each veggie stick and first coat it lightly in flour, shaking off the excess. Then dip it into the beaten eggs, allowing any extra to drip off. Finally, roll it in the panko mixture, pressing slightly to ensure the crumbs adhere well. Repeat this process for all veggie sticks.

        Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Arrange the Veggies: Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the coated veggie sticks in a single layer in the basket, making sure they don't overcrowd to allow even cooking. You may need to cook in batches depending on your air fryer’s capacity.

            Air Fry the Veggies: Spray the tops of the coated sticks lightly with a bit more cooking spray. Air fry at 375°F (190°C) for 12-15 minutes, flipping the veggie sticks halfway through cooking until they are golden and crispy.

              Serve: Once done, carefully remove the veggie sticks from the air fryer and let them cool for a few minutes. Serve warm with your favorite dipping sauce like ranch, tzatziki, or a spicy sriracha mayo.
