2 ripe avocados

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

Cooking spray or olive oil for drizzling

Fresh lime wedges and cilantro for garnish (optional)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Avocados: Cut the avocados in half lengthwise, remove the pit, and gently scoop out the flesh in one piece. Slice each half into thick wedges (about 1-inch thick).

      Set Up Breading Station: In three separate shallow bowls, place the flour in the first dish, whisk the eggs in the second dish, and combine the panko breadcrumbs, garlic powder, paprika, salt, black pepper, and cayenne pepper in the third dish.

        Coat the Avocado Slices:

          - Take each avocado slice first through the flour, ensuring it's fully coated. Shake off any excess.

            - Then dip it into the beaten eggs, letting any excess drip off.

              - Finally, press the avocado slice into the panko mixture, coating it evenly – press gently to ensure the breadcrumbs adhere well.
