Crunchy Buffalo Cauliflower Wraps

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 cup buttermilk (or plant-based milk for vegan)

1 cup breadcrumbs (panko preferred for extra crunch)

½ cup buffalo sauce (adjust for spice preference)

4 large whole wheat or spinach tortillas

1 cup shredded lettuce

1 cup diced tomatoes

½ cup shredded carrots

½ cup ranch dressing or a dairy-free alternative

Preheat Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.

      Batter Dipping: Pour the buttermilk into another bowl. Dip each cauliflower floret first in the buttermilk, letting excess drip off, then coat it in the flour mixture. Shake off any excess batter.

        Coat with Breadcrumbs: After dipping the florets in the flour mixture, roll them in breadcrumbs to achieve a crispy coating. Place them on the prepared baking sheet.

          Bake: Bake the cauliflower florets for about 25 minutes, or until they're golden brown and crispy, flipping them halfway through for even cooking.

            Buffalo Sauce Application: Once the cauliflower is crispy, remove it from the oven and toss the florets in the buffalo sauce until well-coated.
