4 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 large carrot, grated

1 cup shelled edamame, cooked and cooled

1/2 cup roasted peanuts, coarsely chopped

1/4 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated fresh ginger

1 teaspoon garlic powder

Salt and pepper to taste

Optional: chili flakes for a spicy kick

Prepare the Vegetables: In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrot, and cooked edamame. Toss gently to mix the ingredients evenly.

    Make the Dressing: In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), grated fresh ginger, and garlic powder until well combined. Adjust seasoning with salt, pepper, and chili flakes if desired.

      Combine: Pour the dressing over the shredded vegetables and toss thoroughly to ensure everything is evenly coated.

        Add Crunch: Gently fold in the chopped roasted peanuts, cilantro, and green onions. Make sure the peanuts are distributed evenly throughout the slaw. Taste and adjust seasoning if needed.
