4 cups fresh corn kernels (about 6 ears of corn) or 2 (15 oz) cans of sweet corn, drained

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 cup black beans, drained and rinsed

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Zest of 1 lime

1-2 tablespoons honey or agave syrup (optional for sweetness)

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

1 cup tortilla chips, crushed (for crunch topping)

Instructions
 

Prep the Corn: If using fresh corn, bring a large pot of water to a boil. Add corn and cook for about 3-5 minutes until just tender. Drain and shock in cold water to stop the cooking process. If using canned corn, simply drain and rinse.

    Combine the Base: In a large bowl, combine the corn, diced red bell pepper, halved cherry tomatoes, finely chopped red onion, black beans, and diced avocado.

      Make the Dressing: In a small bowl, whisk together the lime juice, lime zest, honey or agave syrup (if using), chili powder, cumin, salt, and pepper until well combined.

        Mix it Up: Pour the dressing over the corn mixture and toss gently until everything is well coated.
