1 large bunch of curly kale (about 8 cups)

2 tablespoons sesame oil

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon sesame seeds (white or black, or a mix)

1/2 teaspoon sea salt (adjust to taste)

Optional: 1 teaspoon chili flakes for a spicy kick

Preheat the Oven: Preheat your oven to 300°F (150°C). This low temperature will help dehydrate the kale without burning it.

    Prepare the Kale: Wash the kale thoroughly under cold water to remove any dirt. Spin it dry in a salad spinner or pat it down with a clean kitchen towel. Remove the tough stems and tear the kale leaves into bite-sized pieces.

      Make the Marinade: In a large mixing bowl, combine the sesame oil, soy sauce, rice vinegar, garlic powder, onion powder, sea salt, and chili flakes (if using). Whisk together until well mixed.

        Coat the Kale: Add the torn kale leaves into the bowl with the marinade. Using your hands, massage the marinade into the kale thoroughly, ensuring every piece is coated evenly.

          Spread on Baking Sheet: Line a baking sheet with parchment paper. Spread the kale leaves in a single layer to ensure even cooking. Sprinkle the sesame seeds over the top for added crunch.

            Bake: Place the baking sheet in the oven and bake for approximately 15-20 minutes. Check them halfway through and give the baking sheet a gentle shake to redistribute the leaves. The chips are done when they are crisp but not browned excessively. Keep a watchful eye during the last few minutes.
