Ingredients

For the Brownies:

1 cup (2 sticks) unsalted butter

2 cups granulated sugar

4 large eggs

1 teaspoon pure vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup brewed espresso or strong coffee (cooled)

For the Cafe Latte Frosting:

1/2 cup unsalted butter, softened

2 cups powdered sugar

2 tablespoons brewed espresso or strong coffee (cooled)

1 teaspoon pure vanilla extract

1-2 tablespoons milk (to adjust consistency)

For the Chocolate Drizzle:

1/2 cup semi-sweet chocolate chips

1 tablespoon coconut oil or unsalted butter

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper.

Melt Butter: In a saucepan over medium heat, melt the butter. Once melted, remove from heat and stir in the granulated sugar until well combined.

Mix Wet Ingredients: Allow the mixture to cool for a few minutes, then whisk in the eggs and vanilla extract until smooth.

Combine Dry Ingredients: In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.

Incorporate Espresso: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the cooled espresso until the batter is smooth.

Bake the Brownies: Pour the brownie batter into the prepared pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake!

Cool Brownies: Allow the brownies to cool in the pan for at least 15 minutes, then transfer to a wire rack to cool completely.

Prepare Frosting: In a medium bowl, beat the softened butter until creamy. Gradually add powdered sugar, followed by brewed espresso, and vanilla extract. Mix until smooth and adjust the consistency with milk if needed.

Frost the Brownies: Once the brownies are completely cool, spread the cafe latte frosting evenly over the top.

Make Chocolate Drizzle: In a microwave-safe bowl, combine chocolate chips and coconut oil (or butter). Microwave in 30-second intervals, stirring until melted and smooth. Drizzle over the frosted brownies using a spoon or a piping bag.

Cut and Serve: Allow the drizzle to set for a bit before cutting the brownies into squares. They’re perfect for serving with your favorite cup of coffee!
