1 cup all-purpose flour

2 large eggs

1 ½ cups whole milk

2 tablespoons melted butter

1 cup shrimp, peeled and deveined

1 cup scallops, cleaned

1 cup crab meat, shredded

2 tablespoons olive oil

2 cloves garlic, minced

1/2 cup heavy cream

1 tablespoon lemon juice

1 teaspoon Old Bay seasoning

Salt and pepper to taste

Chopped fresh parsley for garnish

For the Sauce:

1 tablespoon butter

1 tablespoon flour

1 cup seafood stock

1/4 cup white wine

1/2 cup heavy cream

1 tablespoon Dijon mustard

Salt and pepper to taste

Instructions
 

Prepare the Crepes:

    - In a mixing bowl, whisk together the flour and eggs. Gradually add the milk, stirring constantly until you have a smooth batter.

      - Mix in the melted butter, chopped chives, and a pinch of salt. Let the batter rest for at least 30 minutes.

        Cook the Crepes:

          - Heat a non-stick skillet over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of the crepe batter into the skillet, swirling to coat the bottom evenly.

            - Cook for about 1-2 minutes until the edges start to lift, then gently flip using a spatula and cook the other side for another minute. Transfer to a plate and repeat with the remaining batter. Stack the crepes and keep warm.
