Delicious Grilled Chicken Burrito Bowls

2 large chicken breasts

2 tablespoons olive oil

2 teaspoons cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup uncooked brown rice

2 cups chicken broth

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 large avocado, diced

1 cup cherry tomatoes, halved

½ cup fresh cilantro, chopped

1 lime, juiced

1 cup shredded cheese (cheddar or Monterey Jack)

Sour cream and salsa, for serving

Instructions
 

Prepare the Chicken: In a bowl, mix the olive oil, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper to create a marinade. Coat the chicken breasts thoroughly with the marinade and let them sit for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

    Cook the Rice: While the chicken marinates, rinse the brown rice under cold water. In a medium pot, bring the chicken broth to a boil. Add the brown rice, reduce the heat to low, cover, and simmer for about 40-45 minutes, or until the rice is tender and the liquid is absorbed.

      Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, place the marinated chicken breasts on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill, cover with foil, and let rest for 5 minutes before slicing.
