8 oz elbow macaroni or your favorite pasta

6 large eggs

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup celery, finely diced

1/2 cup red bell pepper, finely diced

1/4 cup green onions, chopped

Fresh parsley or dill for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Drain and rinse with cold water to cool. Set aside.

    Boil the Eggs: In a separate pot, cover the eggs with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pot, remove from heat, and let the eggs sit for 10-12 minutes. Transfer the eggs to an ice bath to cool completely, then peel and chop them.

      Make the Dressing: In a mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk until smooth and well-combined.

        Combine Salad Ingredients: In a large mixing bowl, combine the cooled pasta, chopped eggs, diced celery, diced red bell pepper, and green onions.
