Easy BBQ Chicken Quesadillas for Busy Nights

2 cups cooked chicken, shredded (grilled or rotisserie works great)

1/2 cup BBQ sauce (your favorite brand)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil (for cooking)

Optional toppings: sliced green onions, sour cream, avocado, and jalapeños

Instructions
 

Mix the Chicken and BBQ Sauce: In a medium bowl, combine the shredded chicken with the BBQ sauce. Stir until the chicken is well-coated with the sauce.

    Prepare the Quesadillas: Lay out one tortilla on a clean surface. Spread 1/4 of the BBQ chicken mixture on half of the tortilla. Sprinkle 1/4 cup each of cheddar and mozzarella cheese on top of the chicken. Fold the other half of the tortilla over to create a semi-circle.

      Cook the Quesadilla: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once the oil is hot, carefully place the folded quesadilla in the skillet. Cook for 3-4 minutes until the bottom is golden brown and crispy.

        Flip and Finish Cooking: Carefully flip the quesadilla using a spatula. Cook for an additional 3-4 minutes on the other side until it's golden and the cheese is melted. Remove from the skillet and let it cool for a minute.

          Cut and Serve: Using a sharp knife or pizza cutter, slice the quesadilla into wedges. Serve warm with your choice of optional toppings like sliced green onions, sour cream, avocado, or jalapeños.
