1 lb (450g) flank steak, thinly sliced against the grain

4 cups fresh broccoli florets

2 tbsp vegetable oil (divided)

3 cloves garlic, minced

1-inch piece fresh ginger, minced

1/4 cup soy sauce (low sodium preferred)

2 tbsp oyster sauce

1 tbsp cornstarch

1 tbsp sesame oil

1 tbsp brown sugar or honey

1/4 cup water or beef broth

Salt and pepper to taste

Cooked rice or noodles, for serving

Sesame seeds and sliced green onions for garnish (optional)

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak with 1 tablespoon of soy sauce, the cornstarch, and a pinch of salt and pepper. Allow it to marinate while you prepare the other ingredients (about 10-15 minutes).

    Blanch the Broccoli: In a medium pot, bring water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and set aside.

      Cook the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef slices in a single layer (you may need to do this in batches). Cook for 2-3 minutes until browned and just cooked through. Remove the beef and set aside.

        Stir-Fry Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant. Then, add the blanched broccoli back into the pan.

          Combine Sauces: In a small bowl, whisk together the remaining soy sauce, oyster sauce, sesame oil, brown sugar (or honey), and water (or beef broth). Pour this sauce over the broccoli in the skillet.

            Bring it All Together: Add the cooked beef back into the pan. Toss everything together gently, cooking for an additional 2-3 minutes until heated through and the sauce thickens slightly.
