Easy Chicken Alfredo with Spinach and Peas

12 oz fettuccine or pasta of choice

2 tablespoons olive oil

2 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces

Salt and pepper to taste

3 cloves garlic, minced

1 ½ cups heavy cream

1 cup grated Parmesan cheese

2 cups fresh spinach leaves, chopped

1 cup frozen peas (thawed)

¼ teaspoon nutmeg (optional)

¼ cup fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

      Cook the Chicken:

        In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt and pepper. Add them to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set it aside.

          Sauté the Garlic:

            In the same skillet, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

              Make the Alfredo Sauce:

                Reduce the heat to low. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese slowly until melted and combined. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.

                  Add Spinach and Peas:

                    Stir in the chopped spinach and peas, cooking until the spinach is wilted—about 2-3 minutes. If using, add the nutmeg for a subtle flavor boost.

                      Combine Everything:

                        Add the cooked chicken back into the skillet. Toss in the drained fettuccine, mixing everything together until the pasta is well-coated in the creamy sauce. If needed, adjust seasoning with additional salt and pepper.

                          Serve:
