Easy Chicken Fajita Wraps with Avocado

1 lb (450g) boneless, skinless chicken breasts, thinly sliced

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 bell pepper (any color), sliced

1 medium onion, sliced

4 large flour or whole wheat tortillas

1 ripe avocado, mashed

1 cup fresh spinach or mixed greens

Fresh lime juice for drizzling

Optional toppings: sour cream, salsa, or shredded cheese

Instructions
 

Prepare Chicken Marinade: In a medium bowl, combine the sliced chicken, olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss well to coat the chicken evenly. Allow it to marinate for at least 15 minutes (or up to 2 hours in the refrigerator).

    Cook Chicken: In a large skillet over medium-high heat, add the marinated chicken. Cook for about 5-7 minutes until the chicken is no longer pink, stirring occasionally.

      Sauté Vegetables: Add the sliced bell pepper and onion to the skillet with the cooked chicken. Sauté for an additional 3-5 minutes, until the veggies are tender and slightly caramelized. Remove from heat.

        Prep Tortillas: In a separate pan, warm the tortillas over medium-low heat for about 30 seconds on each side, or until they are soft and pliable.

          Assemble Wraps: Spread a generous layer of mashed avocado on each tortilla. Layer with cooked chicken and veggie mixture, fresh spinach, and a squeeze of lime juice. Add any optional toppings as desired.

            Wrap It Up: Fold in the sides of the tortilla and then roll it up tightly from the bottom to enclose all the delicious filling.
