Easy Chicken Quesadillas with Avocado

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 ripe avocado, sliced

4 large flour tortillas

1 small onion, finely chopped

1 bell pepper, thinly sliced (any color you prefer)

2 tablespoons olive oil

1 teaspoon taco seasoning (optional)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Salsa, sour cream, or guacamole (for serving)

Instructions
 

Prepare the Ingredients:

    - In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and sliced bell pepper. Sauté for 5-7 minutes until the onion is translucent and the pepper is soft. Season with salt, pepper, and taco seasoning if using.

      Combine the Filling:

        - In a mixing bowl, combine the sautéed onions and bell peppers with the shredded chicken and half of the cheese. Stir well to combine.

          Assemble Quesadillas:

            - Heat a separate skillet over medium heat. Place one tortilla in the skillet. Sprinkle a quarter of the remaining cheese on half of the tortilla. Add a quarter of the chicken mixture and a few slices of avocado on top of the chicken. Sprinkle another quarter of cheese over the filling and fold the tortilla in half. Cook for 2-3 minutes, or until the bottom is golden brown and the cheese begins to melt.

              Flip and Finish:

                - Carefully flip the quesadilla and cook for another 2-3 minutes on the other side until golden and crispy. Remove from the skillet and let it rest for a minute. Repeat the process with the remaining tortillas and filling.

                  Serving:
