Easy Creamy Tomato Soup with Grilled Cheese

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon sugar (optional, to balance acidity)

Salt and pepper to taste

1 cup heavy cream (or coconut cream for a dairy-free option)

Fresh basil leaves for garnish

For Grilled Cheese:

8 slices of your favorite bread (sourdough or whole grain recommended)

8 slices of sharp cheddar cheese (or a mix of your favorites)

4 tablespoons butter, softened

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 5 minutes, or until it becomes translucent. Stir in the minced garlic and sauté for an additional minute until fragrant.

    Add Tomatoes & Spices: Pour the crushed tomatoes into the pot with the onions and garlic. Add the vegetable broth, dried basil, dried oregano, and sugar (if using). Stir to combine and bring the mixture to a boil.

      Simmer the Soup: Once boiling, reduce the heat to low and let it simmer uncovered for about 20 minutes. This allows the flavors to meld beautifully. Stir occasionally.

        Blend for Creaminess: After simmering, carefully use an immersion blender to puree the soup until it's smooth and creamy. If you don’t have an immersion blender, transfer it to a regular blender in batches, being cautious of the hot liquid.

          Incorporate Cream: Stir in the heavy cream and season with salt and pepper to taste. Let the soup simmer for another 5 minutes to heat through.

            Prepare Grilled Cheese: While the soup is simmering, butter one side of each slice of bread. Place a slice of cheese between two pieces of bread, buttered sides out.

              Grill to Perfection: In a skillet over medium heat, grill the sandwiches for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Remove from the heat and cut the sandwiches into halves or quarters.
