Easy Greek Chicken Gyro

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

3 cloves garlic, minced

2 teaspoons dried oregano

1 teaspoon paprika

1 teaspoon ground cumin

Salt and pepper to taste

4 pita breads

1 cup Greek yogurt

1 tablespoon lemon juice

1 cucumber, grated

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

Fresh parsley, chopped, for garnish

Feta cheese, crumbled (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, minced garlic, oregano, paprika, cumin, salt, and pepper. Add the chicken thighs and coat them well. Cover and marinate for at least 30 minutes or up to 2 hours in the refrigerator.

    Prepare the Tzatziki Sauce: In a mixing bowl, combine Greek yogurt, lemon juice, grated cucumber (squeeze out excess water), and a pinch of salt. Mix well and refrigerate until needed.

      Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the marinated chicken from the refrigerator and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Remove from heat and let it rest for a few minutes.

        Slice the Chicken: After resting, slice the chicken thighs into thin strips.

          Warm the Pitas: While the chicken is resting, warm the pita breads in a skillet for about 30 seconds on each side or wrap them in foil and heat them in the oven.

            Assemble the Gyros: Spread a generous amount of tzatziki sauce on each pita. Add a handful of chicken slices, followed by cherry tomatoes, red onions, and chopped parsley. Sprinkle with crumbled feta if desired.

              Serve: Roll up each pita around the filling, wrap in parchment or foil for easy handling, and serve with extra tzatziki on the side.
