1 lb (450g) boneless, skinless chicken thighs (cut into 1-inch pieces)

3 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice (freshly squeezed)

2 garlic cloves (minced)

1 tablespoon ginger (grated)

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon sesame oil

1 tablespoon vegetable oil (for grilling)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

Instructions
 

Prepare the Marinade: In a mixing bowl, combine soy sauce, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, red pepper flakes, and sesame oil. Whisk well until the sugar is dissolved and the mixture is evenly blended.

    Marinate the Chicken: Add the cut chicken pieces to the marinade, ensuring all pieces are well-coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

      Preheat the Grill: Preheat your grill to medium-high heat. Lightly oil the grates to prevent sticking.

        Assemble the Skewers: Thread the marinated chicken pieces onto your skewers, leaving a little space between each piece for even cooking.

          Grill the Skewers: Place the skewers on the preheated grill. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
