8 oz elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon mustard powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 cups sharp cheddar cheese, shredded

1 cup Parmesan cheese, grated

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (optional, for topping)

Instructions
 

Cook the Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute until bubbly, stirring constantly. Gradually add the milk, whisking continuously to avoid lumps. Cook for about 5–7 minutes until the mixture thickens.

      Season and Cheese It Up: Stir in garlic powder, onion powder, mustard powder, smoked paprika, salt, and pepper. Remove the sauce from heat and gradually stir in the sharp cheddar and Parmesan cheese until melted and smooth.

        Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce and stir until fully coated.

          Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture into a greased 9x13-inch baking dish.

            Add Topping (Optional): If you want a crispy topping, mix the breadcrumbs with olive oil in a small bowl and sprinkle evenly over the macaroni and cheese.
