Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup buttermilk

1 pound chicken tenders

1/2 cup hot honey (store-bought or homemade)

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Make the Biscuit Dough: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Add in the cold cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Buttermilk: Pour in the buttermilk gradually, stirring with a fork until just combined. Do not overmix. The dough should be slightly sticky.

Shape the Biscuits: Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut out biscuits using a round cutter (about 2.5 inches in diameter) and place them on the prepared baking sheet. Gather scraps and re-roll to make more biscuits.

Bake the Biscuits: Bake the biscuits in the preheated oven for 12-15 minutes or until golden brown on top.

Prepare the Chicken: While the biscuits are baking, season the chicken tenders with smoked paprika, garlic powder, salt, and black pepper. Heat a skillet over medium heat and add a drizzle of oil. Cook the chicken tenders for about 5-7 minutes on each side until they are golden brown and cooked through.

Glaze the Chicken: Once cooked, drizzle the hot honey over the chicken, making sure to coat it well. Allow it to sit for a minute for the honey to caramelize a bit.

Assemble the Biscuits: Cut each biscuit in half and layer with the hot honey chicken tenders. Drizzle a little extra hot honey on top if desired, and garnish with chopped parsley.

Serve & Enjoy: Serve the hot honey chicken biscuits warm, and enjoy the perfect blend of sweet and spicy!
