1 cup rolled oats

2 cups almond milk (or milk of choice)

1 ripe peach, diced (plus extra for topping)

1 tablespoon chia seeds

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

Pinch of salt

Optional toppings: granola, sliced almonds, coconut flakes, or yogurt

Instructions
 

In a large mixing bowl, combine the rolled oats, chia seeds, cinnamon, and salt; mix well.

    In a separate bowl, whisk together the almond milk, honey (or maple syrup), and vanilla extract until well combined.

      Pour the liquid mixture over the dry ingredients and stir until everything is well coated.

        Gently fold in the diced peach, ensuring an even distribution.

          Divide the mixture into two or three jars or containers with lids.

            Cover and refrigerate overnight (or at least 6 hours) to allow the oats to soak and thicken.
