8 oz shrimp, peeled and deveined

8 rice paper wrappers

1 cup lettuce, roughly chopped (green leaf or butter lettuce works best)

1 cup vermicelli noodles, cooked

1/2 cup cucumber, julienned

1 medium carrot, grated

1/2 cup fresh mint leaves

1/2 cup fresh cilantro leaves

1/4 cup green onions, chopped

1 ripe avocado, sliced (optional)

Salt and pepper, to taste

Cooking oil (for sautéing shrimp)

Dipping sauce of choice (e.g., peanut sauce or sweet chili sauce)

Prepare the Shrimp: In a skillet, heat a tablespoon of cooking oil over medium heat. Add the peeled and deveined shrimp. Season with salt and pepper. Cook for 2-3 minutes or until the shrimp are pink and opaque, turning halfway through. Remove from heat and let cool.

    Prep the Vegetables: While the shrimp cools, prepare your fresh ingredients. Slice the cucumber into thin julienne strips, grate the carrot, and chop the green onions. Roughly chop the lettuce and set everything aside.

      Soften Rice Paper Wrappers: Fill a large shallow dish or bowl with warm water. Dip one rice paper wrapper into the water for about 10-20 seconds, or until it softens but isn’t too sticky. Carefully remove it and place it on a clean, flat surface.

        Assemble the Roll: On the softened wrapper, start layering the ingredients. Begin with a small amount of lettuce, then add some cooked vermicelli noodles, julienned cucumber, grated carrot, fresh mint and cilantro. Add 2-3 shrimp, a slice of avocado (if using), and a sprinkle of green onions.

          Roll It Up: Fold the sides of the rice paper over the filling, then roll from the bottom upwards, tightly but gently, to create a secure spring roll. Repeat this process with the remaining rice paper wrappers and filling until everything is used.
