Ingredients

2 cups strawberries, hulled and sliced

1/4 cup granulated sugar, divided

1 pint (2 cups) strawberry ice cream, softened

1 pint (2 cups) vanilla ice cream, softened

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1/2 cup whipped cream, for topping

Extra strawberries or strawberry sauce, for garnish

Instructions

Prepare the Strawberries: In a mixing bowl, combine the sliced strawberries and 2 tablespoons granulated sugar. Toss gently and let sit for 15 minutes to macerate.

Make the Crust: In another bowl, mix the graham cracker crumbs and melted butter with 2 tablespoons of sugar and vanilla extract until crumbly. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even crust.

      Layer the Ice Cream:

        - Start by spreading the softened strawberry ice cream over the crust in an even layer.

          - Next, add a layer of the macerated strawberries, distributing them evenly over the strawberry ice cream.

            - Then, add the softened vanilla ice cream on top of the strawberries, smoothing it out evenly.

Freeze the Cake: Carefully cover the springform pan with plastic wrap or a lid. Freeze the cake for at least 4 hours, or until fully set.

Serve: Once set, remove the cake from the freezer. Run a warm knife around the edges to help release it from the pan, then carefully remove the sides of the springform pan.

Garnish: Top the cake with whipped cream and garnish with additional strawberries or a drizzle of strawberry sauce, if desired.

Slice and Enjoy: Slice the cake with a warm knife for clean cuts. Serve immediately and enjoy your refreshing dessert!
