Ingredients

1 cup quinoa, rinsed

2 cups vegetable broth (or water)

1 can (15 oz) black beans, drained and rinsed

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 cup corn kernels (fresh, frozen, or canned)

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon garlic powder

Juice of 1 lime

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving, optional)

Instructions

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Prepare the Veggies: While the quinoa is cooking, prepare your veggies. In a large mixing bowl, combine the black beans, diced avocado, cherry tomatoes, red onion, and corn.

Season: Sprinkle cumin, chili powder, garlic powder, lime juice, salt, and pepper over the vegetable mixture. Gently toss everything together to combine and coat the veggies with the seasonings.

Assemble the Taco Bowl: In serving bowls, create a bed of quinoa at the bottom. Top with the seasoned black bean and vegetable mixture, arranging it nicely for a colorful presentation.

Garnish and Serve: Add a generous sprinkle of fresh cilantro on top of each bowl, and serve with tortilla chips on the side if desired. Enjoy your delicious and healthy taco bowl!
