Easy Zucchini Pasta Bake

Ingredients
  

2 medium zucchinis, spiralized or sliced into thin rounds

8 oz (225g) pasta of choice (penne or fusilli work great)

1 cup marinara sauce

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring water to a boil. Add a pinch of salt and cook the pasta according to package instructions until al dente. Drain and set aside.

      Prepare the Zucchini: If using spiralized zucchini, use a kitchen towel to squeeze out excess moisture. If sliced, simply layer the zucchini rounds at the bottom of the baking dish.

        Mix the Cheese Filling: In a medium bowl, combine the ricotta cheese, garlic powder, Italian seasoning, half of the mozzarella cheese, and half of the Parmesan cheese. Season with salt and pepper to taste, mixing well.

          Assemble the Bake: In a greased 9x13 inch baking dish, layer half of the cooked pasta on the bottom, followed by half of the marinara sauce, and half of the zucchini. Add the cheese mixture on top, then repeat with the remaining pasta, marinara sauce, and zucchini.

            Top it Off: Finish with the remaining mozzarella and Parmesan cheese evenly distributed over the top.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

                Garnish and Serve: Once out of the oven, allow the pasta bake to cool for a few minutes. Garnish with fresh basil leaves if desired, slice, and serve warm.
