Egg and Veggie Breakfast Wraps

Ingredients
  

4 large eggs

1 tablespoon milk (or a dairy-free alternative)

Salt and pepper, to taste

1 cup fresh spinach, chopped

1/2 cup bell peppers, diced (any color)

1/4 cup red onion, finely chopped

1 small zucchini, diced

1 teaspoon olive oil

1/2 avocado, sliced

4 whole wheat tortillas (or tortillas of your choice)

Salsa or hot sauce (optional, for serving)

Instructions
 

Prepare the Veggies: In a medium bowl, combine the chopped spinach, diced bell peppers, red onion, and zucchini. Set aside.

    Whisk the Eggs: In another bowl, whisk together the eggs, milk, salt, and pepper until well combined.

      Cook the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the prepared veggie mixture and sauté for about 5-7 minutes, or until the vegetables are tender and slightly caramelized. Stir occasionally to prevent sticking.

        Scramble the Eggs: Pour the whisked eggs into the skillet with the veggies. Cook, stirring gently, until the eggs are fully set and fluffy, about 3-4 minutes. Be careful not to overcook the eggs.

          Warm the Tortillas: While the egg and veggie mixture is cooking, warm the tortillas in a separate skillet or microwave for a few seconds until pliable.

            Assemble the Wraps: Lay each tortilla flat and spoon a generous amount of the egg and veggie mixture onto the center of each tortilla. Top with a few slices of avocado.

              Wrap It Up: Fold the sides of the tortilla inward and then roll it up from the bottom to enclose the filling. Repeat with the remaining tortillas.

                Serve: Cut the wraps in half if desired, and serve warm with salsa or hot sauce on the side for dipping.
