Ingredients
  

1 medium eggplant, sliced into 1/2-inch thick rounds

2 tablespoons olive oil

Salt and pepper, to taste

4 slices of fresh mozzarella cheese

2 large tomatoes, sliced

Fresh basil leaves, a handful

4 slices of ciabatta or sourdough bread

Balsamic glaze, for drizzling

Optional: Pesto for spreading

Prepare the Eggplant: Sprinkle the eggplant slices with salt and let them sit for about 20 minutes to draw out excess moisture. Rinse and pat dry.

    Grill the Eggplant: Preheat your grill (or stovetop grill pan) over medium-high heat. Brush both sides of each eggplant slice with olive oil and season with salt and pepper. Grill the slices for about 4-5 minutes on each side until they are tender and have nice grill marks.

      Assemble the Sandwiches: Take two slices of bread and spread pesto on one side (if using). Layer on grilled eggplant, followed by slices of fresh mozzarella, tomatoes, and basil leaves. Drizzle with balsamic glaze. Top with another slice of bread.

        Grill the Sandwiches: Heat a skillet or grill pan over medium heat. Add a little olive oil to the pan. Place the assembled sandwiches in the pan, cooking for about 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.

          Serve: Remove from the pan and let cool for a minute. Cut in half and serve warm with additional balsamic glaze drizzled on top if desired.
