Ingredients

For the Chicken:

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper to taste

For the Tacos:

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheddar cheese

1/4 cup cilantro, chopped (optional)

For the Avocado Cream:

1 ripe avocado

1/4 cup sour cream or Greek yogurt

Juice of 1 lime

Salt to taste

Instructions

Prepare the Chicken:

    - In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper. Coat the chicken breasts with the mixture evenly.

      - Heat a grill pan or skillet over medium heat. Cook the chicken for 6-7 minutes on each side, or until fully cooked and no longer pink inside. Remove from heat and let it rest.

        Make the Avocado Cream:

          - In a blender or food processor, combine the ripe avocado, sour cream (or Greek yogurt), lime juice, and salt. Blend until smooth and creamy. Adjust seasoning if necessary and set aside.

            Assemble the Tacos:

              - While the chicken is resting, warm the tortillas on a dry skillet over medium heat for about 30 seconds on each side.

                - Slice the cooked chicken into strips or dice it as preferred.

                  - In each tortilla, add a handful of shredded lettuce, a generous serving of diced tomatoes, chicken strips, and a sprinkle of shredded cheddar cheese.

                    - Drizzle with avocado cream and top with chopped cilantro if desired.

                      Serve:

                        - Plate the assembled tacos and serve with extra avocado cream and lime wedges on the side for an added zing. Enjoy your family fiesta night!
