Ingredients

  • 6.0 cups mixed baby greens
  • 1.0 cup fresh cranberries
  • 1.0 cup candied pecans
  • 0.5 cup crumbled feta cheese
  • 1.0 medium apple
  • 0.25 red onion red onion
  • 0.5 cup balsamic vinaigrette

Instructions

  • Prepare the Greens: Rinse the mixed greens under cold water, then spin dry in a salad spinner. Place them in a large serving bowl or platter.
  • Cranberries and Apples: If using fresh cranberries, place them in a saucepan with a splash of water over medium heat. Cook for about 5 minutes until they start to burst. Allow to cool. If using dried cranberries, skip this step. Slice the apple thinly, removing the core.
  • Combine Ingredients: In the bowl with the greens, add the cooked (or dried) cranberries, apple slices, red onion, and candied pecans. If using, sprinkle crumbled feta cheese over the top.
  • Dress the Salad: Drizzle the balsamic vinaigrette over the salad. Use tongs to gently toss the salad until everything is evenly coated.
  • Season & Serve: Taste and season with salt and pepper as desired. Serve immediately or let sit for 10 minutes to allow flavors to meld.

Notes

Can be served immediately or after sitting for a few minutes to meld flavors.
