1 lb (450g) boneless, skinless chicken breast, sliced into thin strips

2 tablespoons olive oil

2 tablespoons fresh lime juice

1 tablespoon lime zest

2-3 jalapeños, deseeded and finely sliced (adjust for heat preference)

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

2 garlic cloves, minced

Salt and black pepper to taste

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium onion, sliced

Fresh cilantro, chopped (for garnish)

Tortillas (flour or corn, as preferred)

Optional toppings: sour cream, guacamole, salsa, and cheese

Instructions
 

Marinate the Chicken:

    In a medium-sized bowl, combine the sliced chicken breast, olive oil, lime juice, lime zest, jalapeños, chili powder, smoked paprika, cumin, minced garlic, salt, and pepper. Mix well to ensure the chicken is fully coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

      Cook the Chicken:

        Heat a large skillet over medium-high heat. Add the marinated chicken to the skillet and cook for about 5-7 minutes, stirring occasionally until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

          Sauté the Vegetables:

            In the same skillet, add a little more olive oil if needed. Add the sliced bell peppers and onion. Sauté for about 5-7 minutes or until they are tender and slightly caramelized.

              Combine Ingredients:

                Add the cooked chicken back into the skillet with the sautéed vegetables. Stir to combine and heat through, about 1-2 minutes.

                  Assemble Fajitas:

                    Warm the tortillas in a separate dry skillet or in the microwave. To serve, take a warm tortilla, fill it generously with the chicken and vegetable mixture, and top with fresh cilantro and optional toppings like sour cream, guacamole, or salsa.

                      Enjoy:

                        Serve the fajitas immediately with lime wedges on the side for an extra burst of flavor.
