1 lb boneless chicken breasts, diced

1 cup cooked rice (white or brown)

1 cup shredded carrots

½ cup sliced bell peppers (any color)

½ cup green onions, chopped

1 cup shredded lettuce

1 tablespoon vegetable oil

3 cloves garlic, minced

¼ cup soy sauce

¼ cup sweet chili sauce

2 tablespoons sriracha (adjust to taste)

1 tablespoon sesame oil

Salt and pepper to taste

4 large flour tortillas or wraps

Sesame seeds for garnish (optional)

Instructions
 

Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Add the diced chicken to the skillet. Season with salt and pepper, and sauté for 5-7 minutes or until the chicken is cooked through and golden brown.

    Add Aromatics: Add minced garlic to the skillet. Sauté for an additional 1-2 minutes, allowing the garlic to become fragrant but not burnt.

      Prepare the Sauce: In a small bowl, mix together soy sauce, sweet chili sauce, sriracha, and sesame oil. Pour this sauce over the cooked chicken in the skillet. Stir well to coat the chicken evenly. Cook for another 2-3 minutes until the sauce thickens slightly.

        Assemble the Wraps: Lay out a tortilla on a clean surface. Add a scoop of the cooked rice down the center, followed by the spicy chicken mixture, shredded carrots, sliced bell peppers, and chopped green onions. Top with shredded lettuce.

          Wrap it Up: Fold the sides of the tortilla over the filling, then roll it from the bottom up tightly into a wrap. Repeat with the remaining tortillas and filling.

            Slice and Serve: Cut each wrap in half diagonally. If desired, sprinkle with sesame seeds for an extra crunch. Serve immediately with extra chili sauce or your favorite dipping sauce on the side.
