2 cups cooked chicken, shredded

1 cup carrots, diced

1 cup frozen peas

1/2 cup celery, diced

1/2 cup onion, diced

4 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cups chicken broth

1 cup whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 teaspoon fresh thyme, chopped

1 teaspoon fresh parsley, chopped

For the Biscuit Topping:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 cup sharp cheddar cheese, shredded

3/4 cup whole milk

Prepare the Filling:

    - In a large skillet, melt the butter over medium heat.

      - Add the diced onion, carrots, and celery, and sauté for about 5-7 minutes until softened.

        - Stir in the flour and cook for an additional 1-2 minutes until lightly browned.

          - Gradually whisk in the chicken broth and milk, cooking until the mixture is thickened, about 3-5 minutes.

            - Add the shredded chicken, peas, garlic powder, onion powder, thyme, parsley, salt, and pepper. Mix well and remove from heat.

              Make the Biscuit Topping:

                - Preheat your oven to 425°F (220°C).

                  - In a large bowl, whisk together the flour, baking powder, and salt.

                    - Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until the texture resembles coarse crumbs.

                      - Fold in the shredded cheddar cheese.

                        - Gradually add milk and mix until just combined; be careful not to overwork the dough.

                          Assemble the Pot Pie:

                            - Pour the chicken filling into a 9-inch pie dish or a similarly sized baking dish.
