Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (room temperature)

1 large egg (room temperature)

2 tablespoons unsalted butter (melted and slightly cooled)

1 teaspoon vanilla extract

Optional: Berries or chocolate chips for mix-ins

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined and airy.

Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until fully blended.

Combine Mixtures: Gently pour the wet ingredients into the dry ingredients. Stir with a spatula or wooden spoon until just combined. It's okay if there are a few lumps; overmixing can lead to tough pancakes! If you're adding berries or chocolate chips, fold them in gently now.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with a little butter or cooking spray.

Cook the Pancakes: Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for about 2-3 minutes, or until bubbles start to form on the surface and the edges look set. Flip with a spatula and cook for another 2-3 minutes on the other side, until golden brown.

Keep Warm: Remove the pancakes from the skillet and keep them warm in a low oven (about 200°F or 93°C) while you finish cooking the remaining pancakes.

Serve: Stack the pancakes on a plate and serve warm with butter, maple syrup, or your favorite toppings like fresh fruit, whipped cream, or nuts.

Prep Time: 10 minutes | Total Time: 20 minutes | Servings: Makes about 4-6 pancakes
