2 slices of thick brioche bread

1 large egg

1/4 cup milk

1 teaspoon vanilla extract

1 tablespoon cinnamon

1 cup cooked chicken breast, shredded or sliced

2 tablespoons maple syrup (plus more for drizzling)

1 slice of cheese (cheddar or pepper jack work well)

1 tablespoon butter

Salt and pepper to taste

Optional: Fresh arugula or spinach for a fresh crunch

Prepare the French Toast Mixture: In a shallow bowl, whisk together the egg, milk, vanilla extract, and cinnamon until fully blended. Set aside.

    Coat the Bread: Dip each slice of brioche bread into the egg mixture, allowing it to soak up the liquid for about 30 seconds on each side. Ensure both sides are well-coated.

      Cook the French Toast: In a skillet over medium heat, melt 1 tablespoon of butter. Add the soaked brioche slices and cook for about 3-4 minutes on each side, or until golden brown and slightly crisp. Set aside and keep warm.

        Assemble the Sandwich: In the same skillet, reduce heat to low. Place one slice of French toast on the pan, layer with shredded chicken, drizzle some maple syrup over the chicken, add the slice of cheese, and top with optional greens if using. Finally, place the second slice of French toast on top to complete the sandwich.

          Melt the Cheese: Cover the skillet with a lid for 2-3 minutes to allow the cheese to melt.
