Ingredients

1 cup fresh strawberries, hulled and sliced

2 tablespoons honey or maple syrup (adjust for sweetness)

1 cup almond milk (or any milk of choice)

1/4 cup chia seeds

1 teaspoon vanilla extract

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries and honey/maple syrup. Mix gently and let it sit for about 10-15 minutes to allow the strawberries to release their juices and become syrupy.

Blend the Base: In a blender, combine the almond milk, vanilla extract, and a pinch of salt. Blend until smooth.

Mix Chia Seeds: Pour the blended milk mixture into a large bowl. Gradually add the chia seeds while whisking continuously to prevent clumping. Stir well until combined.

Combine Fruit and Chia Mix: Fold in the macerated strawberries and their juices into the chia mixture. Ensure the strawberries are evenly distributed.

Chill: Cover the bowl with plastic wrap or transfer the mixture into jars. Place in the refrigerator for at least 4 hours, or preferably overnight, to let the chia seeds swell and thicken the pudding.

Serve: Once thickened, stir the pudding well before serving. Spoon into bowls or jars, and garnish with additional fresh strawberries and mint leaves if desired.

Enjoy: Dig in and relish this refreshing and nutritious treat!
