Ingredients
  

4 cups mixed greens (spinach, arugula, and mesclun)

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1/2 red onion, thinly sliced

1 medium avocado, diced

1 cup sweet corn (fresh or canned)

1/2 cup feta cheese, crumbled (optional)

1/4 cup fresh basil leaves, chopped

1/4 cup extra virgin olive oil

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional)

Instructions
 

Prepare the Greens: Rinse the mixed greens under cold water and dry them using a salad spinner or paper towels. Place the greens in a large salad bowl.

    Chop the Vegetables: Halve the cherry tomatoes, dice the cucumber and avocado, and thinly slice the red onion. Add all these vegetables into the bowl with the mixed greens.

      Add the Corn and Feta: If using fresh corn, slice the kernels off the cob. If using canned corn, drain and rinse it. Sprinkle the corn and crumbled feta cheese over the salad.

        Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, pepper, and red pepper flakes (if using) until emulsified.

          Combine: Pour the dressing over the salad and gently toss all the ingredients together until everything is well coated.

            Garnish with Basil: Sprinkle the chopped fresh basil over the top of the salad for a refreshing flavor boost.
