1 small seedless watermelon

8 oz feta cheese, crumbled

1/4 cup fresh mint leaves, finely chopped

2 tablespoons balsamic glaze

1 tablespoon olive oil

Salt and pepper, to taste

Toothpicks or small skewers

Prepare the Watermelon: Cut the watermelon in half lengthwise, and then slice each half into 1-inch thick wedges. Carefully remove the rind from each wedge, leaving the fleshy part intact. Cut each wedge into bite-sized cubes (about 1-inch in size).

    Assemble the Bites: On each toothpick or skewer, thread a watermelon cube, followed by a few crumbles of feta cheese. If you prefer, you can also add a mint leaf between the watermelon and feta for extra flavor.
