1 small seedless watermelon (about 5-7 lbs)

8 oz feta cheese, crumbled

1 cup fresh mint leaves, chopped

2 tbsp honey (optional)

1 tbsp balsamic reduction (for drizzling)

Pinch of sea salt

Freshly cracked black pepper (optional)

1 tbsp olive oil (for drizzling)

Prepare the Watermelon: Cut the watermelon in half and scoop out the flesh, discarding the rind. Cut the watermelon flesh into 1-inch cubes.

    Mix the Feta and Mint: In a medium mixing bowl, combine the crumbled feta cheese and chopped mint leaves. If desired, drizzle in 1-2 tablespoons of honey for added sweetness and mix gently to combine.
