Once you have your coconut cream and berry mixture ready, it’s time to form the clusters. Start by using a small ice cream scoop or a tablespoon to portion out the mixture onto a lined baking sheet. Aim for uniform sizes to ensure even freezing and consistent texture. Leave enough space between each cluster, about 2 inches apart. This spacing is essential as it allows the clusters to freeze properly without sticking to each other, ensuring that they maintain their shape and can be easily separated when serving.

Ingredients

1 cup mixed frozen berries (blueberries, raspberries, strawberries)

1 cup full-fat coconut cream (chilled)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/4 cup unsweetened shredded coconut

Pinch of sea salt

Instructions

Prepare the Coconut Cream: Open the chilled can of coconut cream and scoop out the solidified cream into a mixing bowl, leaving the liquid behind. This should give you around 1 cup of creamy coconut.

Add Sweetness: Stir in the honey or maple syrup, vanilla extract, and a pinch of sea salt into the coconut cream until smooth and evenly combined.

Combine with Berries: Gently fold in the frozen mixed berries until they're well coated with the coconut cream mixture.

Form Clusters: Line a baking sheet with parchment paper. Using a tablespoon or a cookie scoop, drop spoonfuls of the berry-coconut mixture onto the prepared baking sheet, creating clusters.

Sprinkle with Coconut: Top each cluster with a sprinkle of shredded coconut, pressing it lightly into the mixture to help it stick.

Freeze: Place the baking sheet in the freezer for at least 2 hours or until the clusters are completely firm.

Store: Once frozen, transfer the clusters to an airtight container and store them in the freezer for up to a month. Enjoy straight from the freezer when you're in the mood for a refreshing treat!
