Ingredients

1 cup full-fat coconut yogurt

1 cup mixed frozen berries (like strawberries, blueberries, raspberries)

2 tablespoons honey or maple syrup (optional, for sweetness)

1 teaspoon vanilla extract

1/4 cup unsweetened shredded coconut

A pinch of salt

Silicone coin or muffin molds

Instructions

Prepare the Mold: Take your silicone molds and place them on a flat surface or a tray for stability during freezing.

Blend the Fruits: In a blender, combine the mixed frozen berries, honey or maple syrup (if using), and a pinch of salt. Blend until you reach a smooth consistency, leaving some small fruit chunks for texture if desired.

Mix Yogurt: In a mixing bowl, combine the coconut yogurt, vanilla extract, and unsweetened shredded coconut. Mix well until smooth and creamy.

Layer the Mixtures: Spoon a layer of the yogurt mixture into each cavity of the molds, filling them about halfway. Use the back of a spoon to smooth the top.

Add the Berry Puree: Carefully spoon the berry mixture on top of the yogurt layer, filling each cavity to the brim. Use a toothpick or skewer to lightly swirl the mixtures together, creating a beautiful marbled effect.

Freeze Coins: Place the filled molds in the freezer for at least 3-4 hours or until completely frozen.

Unmold and Serve: Once frozen solid, gently push the coins out of the silicone molds. If they stick, let them sit at room temperature for a minute to loosen.

Enjoy: Serve immediately as a refreshing treat or store them in an airtight container in the freezer for up to 2 weeks. Enjoy your delightful Frozen Berry Coconut Yogurt Coins!
