Ingredients

2 cups plain Greek yogurt

1 cup fresh or frozen blackberries (plus a few extra for garnish)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

Silicone ring molds (or a muffin tin)

Instructions

Blend the Base: In a blender or food processor, combine the Greek yogurt, blackberries, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Blend until smooth, with a few blackberry bits still visible for texture.

Prepare the Molds: If using silicone molds, place them on a flat surface like a baking sheet for easier transportation. If using a muffin tin, consider lining it with cupcake liners for easy removal.

Fill the Molds: Pour the yogurt mixture into the molds, filling each ring nearly to the top. Use a spoon to gently tap down the mixture, ensuring no air bubbles remain.

Garnish: Add a couple of whole blackberries on top of each yogurt ring for a pop of color and added texture.

Freeze: Carefully place the filled molds in the freezer. Freeze for at least 4-6 hours, or until completely solid.

Remove the Rings: Once frozen, remove the yogurt rings from their molds. If you’re using a muffin tin, you may need to run warm water over the outside of the tin for easier release.

Serve: Serve immediately for a delicious snack or dessert. If desired, drizzle with extra honey or top with fresh berries before serving.

Store (Optional): Store any leftovers in an airtight container in the freezer. Let sit at room temperature for a few minutes before enjoying for easier chewing.
