Frozen Blueberry Coconut Bites

Ingredients
  

1 cup fresh or frozen blueberries

1 cup coconut yogurt (dairy-free if preferred)

1/2 cup shredded unsweetened coconut

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

A pinch of sea salt

Mini silicone molds or ice cube trays

Instructions
 

In a medium bowl, combine the coconut yogurt, maple syrup, vanilla extract, and a pinch of sea salt. Mix until smooth and creamy.

    Gently fold in the blueberries, making sure they are evenly distributed throughout the yogurt mixture.

      Take your mini silicone molds or ice cube trays and spoon the blueberry coconut mix into each compartment, filling them about 3/4 full to allow for expansion during freezing.

        Sprinkle the shredded unsweetened coconut on top of the yogurt mixture in each mold for added texture and flavor.

          Place the filled molds in the freezer for at least 4 hours, or until they are fully frozen.

            Once frozen, carefully remove the bites from the molds. If you’re using an ice cube tray, you may need to run warm water on the bottom of the tray for easier removal.

              Serve immediately as a refreshing snack or dessert, or store them in an airtight container in the freezer for up to 2 weeks.
