Ingredients

2 cups plain Greek yogurt

1 cup fresh blueberries (plus extra for garnish)

1/2 cup honey or maple syrup

1/4 cup freshly squeezed lemon juice

Zest of 1 lemon

1 teaspoon vanilla extract

A pinch of salt

Instructions

Blend the Base: In a blender or food processor, combine the Greek yogurt, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, and a pinch of salt. Blend until smooth and creamy.

Add Blueberries: Gently fold in the fresh blueberries, being careful not to break them too much; you want to maintain some whole berries for texture.

Prepare Pan: Line an 8x8 inch baking dish or a similar-sized pan with parchment paper, allowing some overhang to make removal easier.

Pour Mixture: Pour the yogurt mixture into the prepared pan, spreading it evenly with a spatula.

Freeze: Cover the dish with plastic wrap or a lid and place it in the freezer. Freeze for at least 4-6 hours or until completely solid.

Cut Bars: Once frozen, remove the yogurt bars from the pan by lifting the parchment paper. Use a sharp knife or a pizza cutter to slice into desired-sized bars.

Serve: Garnish with additional fresh blueberries if desired, and serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Prep Time: 15 minutes | Total Time: 6 hours | Servings: 12 bars
