2 cups rolled oats

1 cup pitted cherries (fresh or frozen)

1 cup unsweetened Greek yogurt

1/4 cup honey or maple syrup

1 tsp vanilla extract

1/2 tsp almond extract

1/4 cup chopped nuts (e.g., almonds, walnuts, or pecans)

1/4 cup dark chocolate chips (optional)

A pinch of salt

Instructions
 

Prepare the Cherries: If you’re using fresh cherries, wash and pit them. If using frozen, allow them to thaw and drain any excess liquid. Chop the cherries into small pieces.

    Mix the Base: In a large mixing bowl, combine rolled oats, chopped cherries, and a pinch of salt. Stir until the cherries and oats are evenly mixed.

      Combine Wet Ingredients: In a separate bowl, mix together the Greek yogurt, honey (or maple syrup), vanilla extract, and almond extract. Whisk until smooth and well combined.

        Combine Mixtures: Pour the wet mixture over the oat and cherry mixture. Stir well until all the oats are coated with the yogurt mixture. If desired, fold in the chopped nuts and dark chocolate chips for extra flavor and texture.

          Form Clusters: Using a spoon or small ice cream scoop, drop clusters of the mixture onto a lined baking sheet. Press them down slightly to form compact clusters.

            Freeze: Place the baking sheet in the freezer for about 2-3 hours or until the clusters are completely frozen.
